Paneer Masala


The Dish for the day is Paneer Masala, it is  usually served with an Indian type of bread (Chappathi, Roti , Naan, etc. ). Some people prefer it to take with rice preparations also. First, the cottage cheese (paneer) is prepared in the traditional method. Here i used the readymade one.

  

To make Paneer :
Boil 1 liter of milk , 
Add two spoons of Lemon juice and a spoon of fermented Yogurt. The milk and water gets separated.
Strain the water and put the paneer in a muslin cloth and keep a heavy weight on top of it for a few hours.
After the paneer gets set, steam it in a pressure cooker for five minutes.
Remove the paneer and make it into cubes. 



Ingredients :
  • 1 onion
  • 1 tomato
  • Ginger small piece
  • 10 garlic cloves
  • Corriander leaves (finely chopped)
  • green chillies 3-4
  • 1 piece cardamom
  • 2 pieces of cloves
  • Chilly powder-1 tsp
  • Turmeric Powder-1/4 tsp
  • Oil


Masala :

Heat oil in a pan. Then add the clove and cardamom. Fry for a few seconds. Add finely cut Garlic, Ginger, and half of the onions. sauté all these things nicely. When the onions turn golden brown and gives a nice aroma, add the tomatoes and sauté. add chilly powder  turmeric powder. Saute all the ingredients ,remove the pan from stove. And cool the masala. Grind the masala well in a grinder with water . Masala should be of medium consistency.

Heat the pan, add a little oil and add the remaining onions and green chillies and add the grinded masala. To this add salt to taste and the paneer cubes. Cook this in slow fire for 15 - 20 minutes. serve with hot bread.
